It's not unusual to have 60, 80 or more than 100 pieces of hardware to replace and this will take way more than the hour suggested. I do like the idea of staining vs painting kitchen cabinets, especially when the wood body is in good shape. Staining the cabinets and replacing the doors and drawer fronts is something we've helped several homeowners do ... and I recommend searching for the cabinet fronts online as there are many good choices.
